Roti, porridge, dosa, mudde, payasam – ragi flour can be used in many different ways. The grain is so tiny, it really cannot be polished all that much! Consequently, all the good stuff is retained. Consider this: It has thirty times as much calcium as rice, more then ten times as much fiber and so on. Check this table if you want more comparisons with rice and wheat.

Can you please tell me the nutritional values of Ragi. Can this millet be given to cattle as feed?
Finger millet is especially valuable as it contains the amino acid methionine, which is lacking in the diets of hundreds of millions of the poor who live on starchy staples such as cassava, plantain, polished rice, or maize meal. Finger millet can be ground and cooked into cakes, puddings or porridge. The grain is made into a fermented drink (or beer) in Nepal and in many parts of Africa. The straw from finger millet is used as animal fodder. It is also used for as a flavoured drink in festivals
Nutritive value of Ragi per 100 g

Gluten gives elasticity to dough helping it to rise and to keep its shape. It is found in many staple foods in the Western diet. It is a protein composite found in wheat and other grains, including barley and rye and processed foods thereof. Gluten is composed of a gliadin fraction (alcohol soluble) and a glutenin fraction (only soluble in dilute acids or alkali).-
