Almonds – 2 cups yields 1 cup almond butter
Almond butter – 1 cup
Ragi flour – 1/2 cup
Jaggery powder – 3/4 cup
Cooking soda – 1 tsp
Vanilla – 1 tsp
Applesauce – 1/4 cup
If you are making almond butter at home, grind the almonds in the mixie / food processor. First the almonds will turn into a fine powder and then the powder slowly starts coming together like butter. 2 cups of almonds will yield 1 cup of almond butter.
Mix the ragi flour, cooking soda and jaggery well. Then add the almond butter, apple sauce and vanilla till the ingredients come together and can be shaped into stiff balls of dough. The consistency should not be runny. Add ragi flour as needed to gain the correct consistency.
Use 1 inch balls to shape into cookies using wet hands if the mixture is too sticky. You can shape the cookies by patting them small ball in your palm. Place on a greased pan and bake in an oven that has been heated to 350 F for about 10 minutes or until the cookies feel done.
