It can certainly be cooked like Quinoa. I am not sure if Quinoa is considered a millet. It is known to provide a high % of protein as do some of the millets. Check about millet nutrition here.

Quinoa is not a millet, it does not belong to Gramineae the grasses family. It is not a cereal, it belongs to the family Amaranthace and Sub family Chenopodioideae. Its seed is used as a grain as it is edible.
