The rich, dark hue of Ragi on the plate is divine. A good source of dietary calcium, fibre, this grain is very cooling on a hot day.
In most of the recipes calling for ragi flour, you could also use the sprouted and roasted ragi flour, Ragi Huri Hittu as it is called in Kannada.

No chaulai is used as green leafy vegetable or its seeds are used to make laddus. Raagi is called rye(english),finger millets(type of millets) or mandua in uttarpradesh.

I make ragi adai frequently. Mix ragi flour with thick curd and salt to make a stiff dough. Add chopped onions, green chillies and little soaked channa dhal. Keep the kneaded dough for an hour and make rotis on banana leaf. You can’t roll it like regular wheat rotis. Cook on medium heat on a tawa with lid. Turn and then cook again, now without the lid. Serve hot with onion chutney or sambar.

I would like to know whether the cereal Mandua (also know as Ragi or Finger Millets) contains the protein “GLUTEN”. What specific proteins and in what quantity are present in Mandua. My son is having ‘Celiac’, an allergy to Gluten which is present in Wheat, Rye, Barley & Oats. If Mandua is ‘GLUTEN-FREE’, then where can I get it or its flour in Delhi.
