Roti, porridge, dosa, mudde, payasam – ragi flour can be used in many different ways. The grain is so tiny, it really cannot be polished all that much! Consequently, all the good stuff is retained. Can ragi as a grain is having more nutrition values or the ragi malt (I.e.,the sprouted ragi powder) ? Does it have side effects if taken daily? When the ragi seeds are kept in water for 8Hrs. and tied in the cloth to make them sprout. It is leaving stains on the cloth. Does the market people are colouring it?

Dear Vaidyanadham, The nutritional value of ragi malt is traditionally considered to be higher than that of the raw grain. This has been studied to be scientifically true in that the bio availability / absorb-ability of the nutrients increases with sprouting.
I always advise a few basic practices when making changes in one’s diet: (i) please make gradual changes rather than a sudden shift – it helps the body adapt to the new diet. (ii) please observe how your body responds, our bodies do not follow textbooks or prescriptions and most importantly (iii) please consult a medical advisor / dietitian / doctor and get their opinion of how to interpret your observations.
With the above in mind, here are a few general comments on ragi malt. Regular intake of ragi malt increases the protein and mineral uptake significantly. So please observe changes in your body, digestion (esp. gas & bowel movements). One typically feels less hungry and more thirsty when there is an increase in the millet intake, so please reduce the quantity of solid food and drink as much water as your body seeks.
Wet grains, not just ragi, do sometimes release their color and this can stain clothes. So stains from wet grains neither rule out not prove that unscrupulous elements have mixed color to the grains. Take a few pinches of the dry grain and rub it between your palms. If it leaves your palms colored, it is possibly stained … while this is not definitive proof, it can be used for first order screening.
To sprout ragi, you can soak the ragi grains overnight in a utensil/bowl with sufficient water as you are probably doing now. Drain out the water and keep it in the same utensil/bowl with the lid closed. Check in 6-8 hours. If a bad odour is developing, rinse it in cold water and drain out the water and keep it with the lid closed. It might take anywhere from 12 to 36 hours to sprout based on the temperature and RH of the place you live in.

Dear Jagruthi, I do not know of a good scientific study saying so. There are many articles floating around that cite some research on ‘millets’ (the articles don’t even identify which one, probably the research studies do, but the couple that I could get access to, didn’t either). Now, as you would have seen on our blog, there are atleast 9 different commonly available millets spanning some 4 families of plants.

How can make raagi rava.

Ragi grain structure is not conducive for making into rava form. It has a soft core inside the hard outer shell. So we can split the grain into grits (fairly coarse rava of some sorts), but we loose a fair amount of the endosperm, the tasty portion of the grain as flour during the process.
Traditionally, women sprinkle some water and mix the flour in a bowl to get it into a rava like form and use that to make preparations such as upma, vangibaath, etc.
