Dear Sir, I purchased de-husked fox millet from stores ( found it to be really tasty food) but I found it to be polished entirely. I used the three tests you suggested in your blog to ascertain this. Further it is 3 times the cost of husked fox millet. Meaning that the milling process takes an additional Rs 72/- per kg and misses the bran too. Therefore I am envisioning to build a micro machine for milling fox millet. Something like I kg a time. Could you please give some pointers or links to achieve this? (Or just tell me why this could be a foolish thought.)

thank you for writing to us. Your observations are valid and I would encourage you to read this article I wrote a few months ago that will help one understand how much of the price is due to justifiable reasons and at what point does it become a case of unscrupulous practices. Another point that I would like to highlight is that when looking to change an ingredient, one needs to look at the per meal cost – the per kg cost does not reflect how much one expense is incurred on a meal. Please see this article I wrote recently on this topic.
Now, coming to your idea of a micro machine, I whole heartedly encourage you in this pursuit. The reasons for this are two fold:
Such a machine would really overhaul the supply chain and hence will need to be really effective in convincing people to abandon what they have and move to this. But hey, achieving something challenging makes the journey that much more fun and when successful, that much more profitable.

Buhler has good machines for dehusking millets, but it is costly and power intensive. if we have go for entire plant of buhler the volume must be pretty high to be viable.
Coimbatore has many small companies offering small machines of impact huller of varying efficiencies.

You are right, there are machines from big agri processing equipment manufacturers, but they work at a very large scale. Though they are fairly reliable and work well, these machines are designed to produce polished millets – i.e. the bran layer which has the highest proportion of nutritional content is removed. And that is why we see the market flooded by products that are packaged and presented in a very appealing costing a bomb, even though they are nutritionally inferior.
There are a few small scale millet processing machine fabricators in Coimbatore, Salem, Mysuru, Haveri, Gooty, etc. And these machines allow for the bran to be retained during processing depending on the intention and skill levels of the entrepreneurs and operators.

There are various characteristics of millets that makes whole grain processing in large scale more than just a technological challenge. I can share more information in this regard when corresponding/taking directly.
If you are looking to process polished grain I do not have good leads … there are various processors in Tamil nadu and Maharashtra, but it’s not my area of expertise.

Dear Rudra, thank you for writing to us. FM and BTM are two very different grasses giving us nutritious grains that we eat as cereals. They are different from one another in every characteristic – not that they are opposites, just different.
Very happy know that you would like cultivate millets. Crop selection would depend on many factors. Please give us more information of the soil, agroclimatic conditions, resource available, etc. to enable us to suggest appropriate crops for cultivation in your farm.

Dear Millets- Do we need to remove the outer husk of millets especially Pearl Millet, (Bajra) and Foxtail millet, before using them or can they be used along with their husk ? If they are to be dehusked how do we do it as they are tiny.

Bajra being a naked grain does not have to be dehusked whereas Foxtail millet is a grain with husk and needs to be dehusked.

Millets like Foxtail, Kodo and Little were traditionally hand pounded or fed in to a stone grinder or wooden grinder for removing the husk. Now there are machines – dehuskers available for removing of the husk from these grains by mechanical process.

Dear Shree, There has been much development in milling of millets – specifically dehusking of the husked millets. There are couple of issues in getting the last mile work in this regard. Need to adapt the existing grain processing technology to suit this.
