Apologies for the long delayed reply. I hope your trials with millet based foods continue.
Some work has been done by the TNAU and the UAS, Bangalore food science departments on millet based foods. Though unfortunately, I have not come across systematic scientific studies / publications on the material properties of different millet forms. I shall share a link here in case I come across something. Do share if you have found something yourself since you shared your Q here.

Is this Samo or morayo . As we get two different millets in Gujarat. What is the difference between the two and nutrition benefit of each..

Yes, from what I can find online when searching for the images for Samo and morayo, it does look like barnyard millet. But I could not see different images for the two – people seem to be using the names as if they are talking of the same thing. If you have the grains or their rice, please take a photo and share it, I’ll try to see if they can be distinguished.

Different millets ( Siru Danya ) are available in selected shops in main markets of Coimbatore,Tamil Nadu. Price are normal. Nearly seventy five rupees per K.G. Online price nearly four times. They are also sold in selected shops in Bangalore which deal with “Organic foods”.
These were ignored earlier because some people thought that they were meant for “Lower Strata ” of society .. Now they are the favorites of “Rich Diabetics”……..an irony !

Dear Jayapal, thank you for sharing your thoughts. Yes, it is indeed an irony that yester years’ poor people’s food is now becoming the rich people’s food of choice!
The online market place for groceries in India has not yet matured enough to understand the quality of the material they deal with. Unfortunately costumer awareness about this is also low. And so we have unscrupulous vendors procuring open market inferior material (fully polished millet rices), packaging it attractively and selling it at premium prices. We should try and post comments on such sites asking for a justification of their pricing policy – they are damaging the millet market place. Do share which website you were referring to.

I am not aware of a particular market in/near Uttarakhand that I can recommend. But from what I have heard from friends in those parts, barnyard millet is widely traded and processed to edible forms.

Hi Madhuri,
the grain used during fasting in many parts of North and central India, साँवं / झिंगोरा / सिकिया in Hindi, is barnyard millet. Little millet, as you rightly identified, is called कुटकि in Hindi and saame/saamai in the south Indian languages.

Hi, I made laddus with Barnyard millet. It tastes yummy but leaves a very bitter taste at the end. How to solve this? Any suggestions will be helpful

Very happy to hear about the barnyard millet laddus. Though sad to hear about the bitter aftertaste. There could be a few explanations for the bitter aftertaste. The most likely suspect is stale flour/rice. Could you share how you prepared it? Did you start preparing it using the barnyard millet in its flour form or as a rice?
Millets have a fairly high fat content and almost all of this fat is in the bran layer. This is good fat and along with the high mineral content in the bran layer, it makes the whole grain millet rices magical in terms of nutrition and taste. The flip side is that magic comes with an expiry date ! I shall write about this soon in more detail in a post. Do share the recipe you followed and check with the store you bought the millet rice/flour from.

I have used Barnyard millet, combined with powdered jaggery and ghee liquid. Added a few cashews and almonds for garnish.
Jaggery is manually powdered not the store bought powder.
I tried germinating the millet and powdering it later.
I have dry roasted and powdered the same and also powdered directly.
All three types had the bitter taste in the mouth.
Please give me your advise and suggestions.
